(Quesadilla de Flor de Calabazas)
At the moment our zucchini and yellow squash plants are creating beautiful yellow and orange blossoms. These edible flowers are soft, delicate, and taste slightly like the squash itself. This delicacy is prepared in multiple ways in Mexican or Italian cuisine.
Remove the stem of the blossom. Gently open the flower to remove any dirt and slice the blossom a few times. Cook a corn tortilla on a hot dry pan for a few minutes and then turn the tortilla.
Immediately place some grated cheese and the cut blossoms on the hot tortilla and fold the tortilla in half (can also add salt and thinly chopped garlic). Using a cotton cloth, press on the folded tortilla once or twice. Turn to the other side to heat and again press with the cloth. Enjoy warm with chopped cilantro, guacamole, or salsa.
